There’s something about spring mornings that makes me crave something fresh yet comforting. This quick pea and ham toastie ticks all the boxes, it’s vibrant, satisfying, and comes together in a flash. Perfect for those days when you want a little green on your plate without much fuss.

Preparation

  1. In a small bowl, gently mash the thawed peas with the cream cheese, garlic, and chopped mint until roughly combined. Season lightly with salt and pepper.
  2. Spread a thin layer of butter on one side of each bread slice. On the unbuttered side of four slices, spread the pea mixture evenly.
  3. Layer the ham slices over the pea spread, then sprinkle with the grated cheddar.
  4. Top with the remaining bread slices, butter side out, to form four sandwiches.
  5. Heat a non-stick frying pan or sandwich press over medium heat. Cook the toasties for about 3-4 minutes on each side, or until golden brown and the cheese has melted.
  6. Remove from heat, slice in half, and serve immediately with a crisp green salad or a handful of fresh rocket.

My tips

For the best flavour, use good-quality ham, leftover roast ham is perfect here. Keep some texture in the pea mixture by mashing gently rather than completely puréeing it. Also, spreading butter evenly on the bread helps create a wonderfully crisp, golden crust without burning.

Variations

If you want to lighten it up, try swapping mature cheddar for mozzarella and add a few cherry tomato slices inside. A dash of Dijon mustard stirred into the pea spread brings a nice tang if you’re feeling adventurous. Vegetarians can simply leave out the ham and toss in some toasted pine nuts for a bit of crunch.
